Ingredients:
4 heads Elephant Garlic
2 Red Peppers
Extra Virgin Olive Oil
Crackers or Crusty Bread
Directions:
Pre-heat oven to 350 degrees F.
Cut off the top of the garlic bulb.
Wrap the bulb in heavy aluminum foil and bake for about an hour.
Along with the garlic, over a direct flame on a gas burner or on your gas grill, roast the red peppers until blackened and blistering.
Remove to a container and let stand for 15-20 minutes to cool.
Peel and cut into strips lengthwise.
Set in a small bowl and drizzle with olive oil.
Remove the garlic from the oven, remove the foil, and place in the center of a small plate.
Garnish the plate with the strips of roasted red pepper and serve with crackers or crusty bread.
