1 Bunch of Broccoli Rabe
1 lb of turkey sausage, casings removed and cut into small pieces
1/2 lb. sliced mushrooms
4 eggs
2-3 cloves of garlic, chopped
1 cup shredded mozzarella cheese
Optional: Crushed Red Pepper
Wash Broccoli Rabe and cut into 2-inch pieces. Blanch Broccoli Rabe in large pot of salted, boiling water for 1-2 minutes. Drain. In large saucepan, cook sausage until done. Add mushrooms and garlic and saute until lightly browned. Add blanched broccoli rabe to sauce. Cook 1-2 minutes. Beat eggs and add to the saucepan. Cook over medium high heat until done. Sprinkle with mozzarella cheese and crushed red pepper. Serves 4-6
